I’m so excited to actually get to open my new cook book that my Sister-in-law gave me for Christmas. It is called Sweet Eats by Rose Dunnington. This book is full of yummy treats, some easy and some a little more challenging. As I was doing this for a blog post, I decided to try something a little easier and let me tell you, this recipe for Chocolate-Mint Cookies is very easy. It is also very yummy. I made a plate for my husband to take to work and his co-workers had them all gone within minutes!
I also think this recipe would be great to add things to and dress up a little. Dried fruit, marshmallows, caramel, nuts, anything would work well with this basic cookie recipe. So, have a go at it and make it your own!
Chocolate Mint Cookies
125g (1/2 cup or 1 stick) butter, softened
3/4 cup (packed) brown sugar
1 egg
3/4 teaspoon peppermint extract (You can use vanilla extract. Raspberry extract may taste good too)
3/4 cup plain (all-purpose) flour
3/4 cup cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup chocolate chips (I tend to go a little overboard with this ingredient)
