Hubby loves Buttermilk Chicken for dinner, but I often end up with half a carton of buttermilk in the fridge that gets forgotten about. This time I made sure I put it to good use. These muffins are really easy to put together and could be changed up a lot with all kinds of fruit or even choc chips. The recipe is based on this one from taste.com.au. The cooked muffins hold together really nicely and aren’t crumbly, so are great for little kids to eat without making too much mess.
Apple and Sultana Muffins
2 cups (300g) self raising flour, sifted (here’s how to make your own)
2/3 cup (150g) caster sugar

1/2 teaspoon cinnamon
1 cup (250ml) buttermilk
2 eggs
1/3 cup (80ml) vegetable oil
2 apples with skin still on, grated
1/2 cup (85g) sultanas

Preheat oven to 180°C (360°F).
Place flour, sugar and cinnamon in a large bowl. Stir to combine. In a jug, whisk together buttermilk, eggs and oil. Pour wet mixture into dry ingredients and stir until just combined. Then, stir through the grated apple and sultanas.
Spoon mixture into a 12 muffin papers (I used the regular sized silicon ones). Place in oven and bake for 20 minutes or until golden. Serve warm or cold.
